Deep purple/crimson colour. Lifted fresh fruit aromas of blackberry and plum. Secondary characters of dark chocolate, dried herbs and spice add complexity to the bouquet. Luscious red berry and cassis characters throughout the palate while subtle spice and dark chocolate characters add complexity. The mid-palate is soft and round with long elegant tannins and a velvety, persistent finish
Fruit was harvested at night and early in the morning then taken directly to the winery to be de-stemmed. The must was then transferred to a static fermenter where warm controlled fermentation was carried out. Post fermentation the wine was transferred into barrel for malolactic fermentation. The wines were racked after MLF and returned to oak for 12 months maturation before final blending and barrel selection for the second six.
